In the vast landscapes of Outback Queensland, a pioneering spirit has given rise to Western Queensland Spirit, the region's first craft distillery.
The distillery was built with the purpose of bringing the best of Outback Queensland together. It now has eight products that feature botanicals from across the Outback and has opened a cellar door that has welcomed thousands of visitors since its opening in April 2023.
With 8 different products that tell stories and highlight Outback Queensland, our Distillers Michael and Tiff have set about creating products that showcase botanicals sourced from within the Outback.
Our Bottlebrush vodka is vapour infused with bottlebrush flowers while our Bushranger Rum pays homage to how our cellar door was farmed in the 1900's through spicing with Muscatel Grapes and Orange.
Of the three gins, the Desert Oasis Gin in made in a Modern Australian style while the Outback Gin incorporates Desert Lime and Bush Lemon to provide an Outback Dry style gin. Western Skies Gin is a deep sunset colour following steeping with Ruby Grapefruit, Blood Orange and Lilly Pilly.
We then feature three liqueurs, a Lemoncello, an Orangecello using oranges from the nearby Rosedale Orchards and a Sticky Date Liqueur, made using macerated dates from the Outback Date Farm in Charleville.
Our whisky has gone into barrel so watch this space in the years to come.
Our signature experience at Western Queensland Spirit is to grab a tasting paddle with four of our products, a grazing platter filled with produce from across Outback Queensland and hop in a beanbag under the outback skies and enjoy the serenity of our Cellar Door.
In 2024 we are introducing gin masterclasses to our Distillery to compliment the cellar door experience and regularly feature bespoke events such as Paint & Sips.
An outback twist to the classic gimlet. A lightly sweet and zesty timeless cocktail.
Combine all ingredients in a cocktail shaker and shake. Strain and serve with a sprig of rosemary in a small gimlet or tasting glass.
